Saffron-Kissed Rice Pilaf with Roasted Vegetables and Toasted Almonds

Aromatic saffron elevates simple rice to a dish worthy of a special lunch. Slow-roasted vegetables offer sweetness and depth, while toasted almonds add a delightful crunch.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 1 medium carrot, peeled and diced
  • 1 medium tomato, diced
  • 1 cup long-grain rice, rinsed
  • 2 cups vegetable broth (or water)
  • 1/4 teaspoon saffron threads
  • 1/4 cup almonds, slivered
  • 1 tablespoon butter
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Method

  1. Preheat oven to 400°F (200°C). Toss the diced onion, carrot, and tomato with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
  2. While the vegetables roast, bloom the saffron: Gently crush the saffron threads between your fingers and place them in 1/4 cup of hot (but not boiling) vegetable broth. Let it steep for at least 10 minutes to release its color and aroma.
  3. In a medium saucepan, melt the butter over medium heat. Add the rinsed rice and toast it for 2-3 minutes, stirring constantly, until it becomes slightly translucent.
  4. Pour in the remaining vegetable broth and the saffron-infused broth into the saucepan. Add a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 18 minutes, or until the rice is tender and the liquid is absorbed. Do not stir while simmering.
  5. While the rice simmers, toast the slivered almonds in a dry skillet over medium-low heat for 3-5 minutes, or until golden brown and fragrant. Watch carefully, as they can burn easily.
  6. Once the rice is cooked, gently fluff it with a fork. Stir in the roasted vegetables.
  7. Serve the saffron-kissed rice pilaf warm, garnished with toasted almonds and fresh parsley (if using).

Chef's Note

For a richer flavor, substitute chicken broth for the vegetable broth. A squeeze of lemon juice just before serving can add brightness. For an extra level of fanciness, add a pinch of smoked paprika to the vegetables before roasting.
