Saffron-Kissed Rice Pilaf with Roasted Vegetables and Toasted Almonds
Aromatic saffron elevates simple rice to a dish worthy of a special lunch. Slow-roasted vegetables offer sweetness and depth, while toasted almonds add a delightful crunch.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 1 medium carrot, peeled and diced
- 1 medium tomato, diced
- 1 cup long-grain rice, rinsed
- 2 cups vegetable broth (or water)
- 1/4 teaspoon saffron threads
- 1/4 cup almonds, slivered
- 1 tablespoon butter
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Method
- Preheat oven to 400°F (200°C). Toss the diced onion, carrot, and tomato with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
- While the vegetables roast, bloom the saffron: Gently crush the saffron threads between your fingers and place them in 1/4 cup of hot (but not boiling) vegetable broth. Let it steep for at least 10 minutes to release its color and aroma.
- In a medium saucepan, melt the butter over medium heat. Add the rinsed rice and toast it for 2-3 minutes, stirring constantly, until it becomes slightly translucent.
- Pour in the remaining vegetable broth and the saffron-infused broth into the saucepan. Add a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 18 minutes, or until the rice is tender and the liquid is absorbed. Do not stir while simmering.
- While the rice simmers, toast the slivered almonds in a dry skillet over medium-low heat for 3-5 minutes, or until golden brown and fragrant. Watch carefully, as they can burn easily.
- Once the rice is cooked, gently fluff it with a fork. Stir in the roasted vegetables.
- Serve the saffron-kissed rice pilaf warm, garnished with toasted almonds and fresh parsley (if using).
Chef's Note
For a richer flavor, substitute chicken broth for the vegetable broth. A squeeze of lemon juice just before serving can add brightness. For an extra level of fanciness, add a pinch of smoked paprika to the vegetables before roasting.
