Ingredients

  • 400g Beef, cut into 1-inch cubes
  • 4 slices Bacon, chopped
  • 1 large Onion, thinly sliced
  • 3 cloves Garlic, minced
  • 2 large Tomatoes, chopped
  • 1 Red Bell Pepper, sliced
  • 2 tbsp Olive Oil
  • 1 tbsp Butter
  • Salt, to taste
  • Black Pepper, to taste
  • 1 tsp Smoked Paprika
  • 1/2 cup Beef Stock
  • Fresh Parsley, chopped for garnish

Method

  1. Prepare the Ingredients: Season the beef cubes with salt, black pepper, and smoked paprika. Set aside.
  1. Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy. Remove the bacon using a slotted spoon, leaving the rendered fat in the skillet.
  1. Sear the Beef: Increase the heat to medium-high and add the seasoned beef to the skillet. Sear until browned on all sides, about 4-5 minutes. Transfer the beef to a plate.
  1. Sauté Aromatics: Lower the heat to medium, add olive oil and butter to the skillet. Once the butter has melted, add the onions and cook until softened, about 5 minutes. Add the garlic and cook for an additional 1 minute until fragrant.
  1. Build the Sauce: Add the tomatoes and bell pepper to the skillet. Cook, stirring occasionally, until the tomatoes begin to soften, about 3 minutes.
  1. Simmer Together: Return the beef and crispy bacon to the skillet. Pour in the beef stock, stir to combine, and bring the mixture to a gentle simmer. Cover and cook for 15-20 minutes until the beef is tender and the flavors meld.
