Chocolate Raspberry Caramel Parfait

Ingredients

  • 100g dark chocolate (roughly chopped)
  • 1 cup fresh raspberries
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 cup heavy cream
  • 1/4 cup caramel sauce
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon butter
  • 1/4 cup crushed graham crackers (or digestive biscuits for an extra touch)
  • Fresh mint leaves (for garnish)

Method

  1. Prepare the Raspberry Compote:

- In a small saucepan, combine the raspberries, granulated sugar, and lemon juice over medium heat.

- Cook, stirring frequently, until the raspberries break down and the mixture thickens slightly, about 10 minutes.

- Set aside to cool completely.

  1. Make the Chocolate Ganache:

- In a heatproof bowl, combine the dark chocolate and butter.

- Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.

- Pour the hot cream over the chocolate mixture, allowing it to sit for a minute before stirring until smooth.

- Stir in the vanilla extract and pinch of salt. Allow it to cool to room temperature.

  1. Assemble the Parfaits:

- In serving glasses, start with a layer of caramel sauce at the bottom.

- Add a layer of crushed graham crackers, followed by a generous spoonful of the cooled raspberry compote.

- Pour the chocolate ganache over the raspberry layer.

- Repeat the layers if space allows, finishing with a drizzle of caramel on top.

  1. Chill the Dessert:

- Place the assembled parfaits in the refrigerator for at least 30 minutes to allow the flavors to marry and the dessert to set.
