Tuscan Chicken Bake for Two
This comforting yet elegant dish features juicy chicken breasts baked in a rich tomato and basil sauce, topped with melted mozzarella and parmesan cheese. Serve with crusty bread for soaking up the delicious sauce.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 (14 ounce) can crushed tomatoes
- 1/4 cup fresh basil leaves, chopped
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon dried oregano
- 1/4 cup chicken broth
- 4 ounces fresh mozzarella cheese, sliced
- 2 tablespoons grated Parmesan cheese
- Salt and freshly ground black pepper to taste
Method
- Preheat oven to 375°F (190°C). Lightly grease a small baking dish.
- Season the chicken breasts generously with salt and pepper.
- Heat olive oil in a medium oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, until golden brown. Remove chicken from skillet and set aside.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and red pepper flakes (if using) and cook for another minute until fragrant.
- Stir in the crushed tomatoes, basil, oregano, and chicken broth. Season with salt and pepper to taste. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Place the seared chicken breasts back into the skillet, nestling them in the tomato sauce.
- Top each chicken breast with slices of fresh mozzarella cheese and sprinkle with grated Parmesan cheese.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Let rest for a few minutes before serving.
Chef's Note
For an extra layer of flavour, add a splash of balsamic vinegar to the tomato sauce while it simmers. Serve with a simple green salad to balance the richness of the dish.
