Tuscan Chicken Bake for Two

This comforting yet elegant dish features juicy chicken breasts baked in a rich tomato and basil sauce, topped with melted mozzarella and parmesan cheese. Serve with crusty bread for soaking up the delicious sauce.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (14 ounce) can crushed tomatoes
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried oregano
  • 1/4 cup chicken broth
  • 4 ounces fresh mozzarella cheese, sliced
  • 2 tablespoons grated Parmesan cheese
  • Salt and freshly ground black pepper to taste

Method

  1. Preheat oven to 375°F (190°C). Lightly grease a small baking dish.
  2. Season the chicken breasts generously with salt and pepper.
  3. Heat olive oil in a medium oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, until golden brown. Remove chicken from skillet and set aside.
  4. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and red pepper flakes (if using) and cook for another minute until fragrant.
  5. Stir in the crushed tomatoes, basil, oregano, and chicken broth. Season with salt and pepper to taste. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  6. Place the seared chicken breasts back into the skillet, nestling them in the tomato sauce.
  7. Top each chicken breast with slices of fresh mozzarella cheese and sprinkle with grated Parmesan cheese.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  9. Let rest for a few minutes before serving.

Chef's Note

For an extra layer of flavour, add a splash of balsamic vinegar to the tomato sauce while it simmers. Serve with a simple green salad to balance the richness of the dish.
