Spiced Apple & Pecan Crumble with Honey-Cocoa Drizzle

This warm, comforting crumble elevates humble ingredients into a sophisticated lunch treat. The sharp apple pairs beautifully with the rich cocoa and crunchy pecans, while a hint of pepper adds a delightful warmth to the honeyed sweetness.

Ingredients

  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons butter, unsalted
  • 1/4 teaspoon ground cinnamon
  • Pinch of ground cloves
  • 1/4 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1/4 cup packed brown sugar
  • 1/4 cup pecans, roughly chopped
  • 2 tablespoons honey
  • 1 tablespoon cocoa powder
  • 1 tablespoon milk (any kind)
  • Pinch of black pepper, freshly ground
  • Pinch of salt
  • 2 scoops vanilla ice cream or Greek yogurt, for serving (optional)

Method

  1. Preheat oven to 375°F (190°C).
  2. In a medium skillet, melt the butter over medium heat. Add the diced apples, cinnamon, and cloves. Cook for 5-7 minutes, or until the apples are slightly softened, stirring occasionally. Remove from heat and set aside.
  3. In a small bowl, combine the flour, oats, brown sugar, pecans, and salt. Mix until well combined.
  4. Spoon the cooked apple mixture evenly into two small oven-safe ramekins or bowls. Sprinkle the flour mixture evenly over the apples.
  5. Bake for 20-25 minutes, or until the topping is golden brown and the apples are bubbling.
  6. While the crumble is baking, prepare the honey-cocoa drizzle. In a small saucepan, whisk together the honey, cocoa powder, milk, and pepper over low heat. Heat gently until smooth and slightly thickened, about 2-3 minutes. Be careful not to boil.
  7. Remove the crumbles from the oven and let cool slightly. Drizzle generously with the honey-cocoa sauce. Serve warm, optionally topped with a scoop of vanilla ice cream or a dollop of Greek yogurt.

Chef's Note

For a richer flavour, toast the pecans in a dry pan for a few minutes before adding them to the crumble topping. You can also substitute other nuts like walnuts or almonds.
