Spicy Pesto Baked Eggs with Chicken & Olive Crumble

Ingredients
- 4 large eggs
- 1 cup cooked chicken, shredded
- ½ cup hummus
- ¼ cup pesto
- 2 jalapenos, thinly sliced (seeds removed for less heat)
- ¼ cup olives, pitted and finely chopped
- ¼ cup cheese, grated (cheddar, mozzarella, or a blend)
- 2 cups mixed salad greens
- 2 tablespoons olive oil
- 1 tablespoon pasta sauce (optional, for added depth)
- Salt and freshly ground black pepper to taste
- Red pepper flakes (optional, for extra spice)
- Butter for greasing
Method
- Prepare the Base: Preheat your oven to 375°F (190°C). Lightly butter two small oven-safe dishes or ramekins. Spread half of the hummus on the base of each dish, followed by a small spoonful of pasta sauce (optional).
- Layer the Flavors: Divide the shredded chicken evenly between the two dishes, nestling it into the hummus. Drizzle half the pesto over the chicken in each dish. Scatter the sliced jalapenos over the pesto.
- Add the Eggs: Gently crack two eggs into each dish, placing them on top of the chicken and pesto mixture.
- Create the Crumble: In a small bowl, combine the chopped olives and grated cheese. Sprinkle this mixture evenly over the eggs in each dish.
- Bake: Bake in the preheated oven for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
- Dress the Salad: While the eggs are baking, lightly toss the salad greens with olive oil, salt, and pepper.
- Serve: Remove the baked eggs from the oven and let them cool for a minute. Top the salad greens with the hot egg dishes and serve immediately. Optional, add a dollop of hummus on the side.
Chef's Note
For an even richer flavor, use a sundried tomato pesto or add a sprinkle of Parmesan cheese to the olive crumble. If you prefer your eggs fully cooked, bake for a few minutes longer, checking frequently to avoid overcooking.
